How To Make Healthy Huevos Rancheros

Hi everyone! Is it August already? Where is the summer going?

Let’s start the month off with a healthy recipe! Today I am sharing with you one of my favorite breakfasts, huevos rancheros! If you follow my instagram or snapchat you will see I frequently have posted pix or snaps of my beautiful breakfasts! Many times it’s huevos rancheros.

I love making my breakfast on the weekends! I pretty much always want to have a nicely cooked egg dish on my days off. I confess, I do make this dish almost every weekend because it’s just so easy to make and it’s delicious.

What is it?

Traditional huevos rancheros consists of tortilla, eggs, salsa, black beans, rice, cheese, and avocado, I leave out the beans, rice and cheese, so it’s much lower in calories and carbs. This is my version of my go to breakfast:

Total time: approx 30 min

Servings: 1

You will need:

2 eggs

1 medium sized tomato (plum tomatoes work)

1/4 of a small yellow onion

1 or 2 garlic cloves (this is your preference)

1 tsp Chili Power

dash of cayenne pepper (to your preference)

Jalapeño or chili pepper (optional)

salt & pepper

Something to set the eggs on top of ie: toast, tortilla, or romaine lettuce. (i’ve recently been using low-carb almond flour tortillas!)

2 tsp avocado or grape seed oil*

Steps:

1. First dice the tomato and onion into small cubes, we are making a salsa so they should be relatively small, unless you like chunky salsa!

2. Next mince the garlic.

3. Place 1tsp of oil into a small pan and let it heat on medium, place the onion, tomato and garlic into the pan and turn the heat to low and stir together. Add in the spices. let it all simmer on low heat until the sweetness of the tomato comes out .

4. While the salsa simmers, place the other teaspoon of oil in a separate pan and heat it on medium. Crack the two eggs in the pan and let them cook to your desired consistency (I like over medium).

5. In the mean time toast your toast or heat the tortilla or prep the lettuce depending on which you are using. If i’m having toast I like to put a bit of butter on it.

6. Assemble everything! Place the bread/lettuce/tortilla on a plate and set the eggs on top, next pour the salsa over the eggs. Add salt and pepper to taste and Enjoy!

* You can use any non stick method you prefer, I don’t use much oil to cook or fry my eggs since I use ceramic nonstick pans.
